so, as many of you know, we have a German Shepherd called Kodi. Well he has health problems were his own immune system attacks his body poor thing. We have managed to keep up by giving him tablets every other night. But Dad has discovered another hole in his bottom area... This means we'd have to go down the operation route which is just something we can not afford. So mum and dad have made the decision to have him put down. Its not fair to him to be stressing out, he is not the dog he could be if he didn't have this problem, and it can only get worse now, not better. We are all very sad about this, and he is only 4 years old, turning 5 in July. He is a character, our dafty dog, and he will be missed... but in the end this is what is right for him.

So if I seem slow in my posting, or a little museless, it is just as I try to process this. We knew this would be happening at some point, that we wouldn't have many years with him, but it is still upsetting. so just bear with me as I spend time with the family and him, we still have until next monday with him.

Lowries guide to surviving college hunger

Basically this might be changed. But here are some basic recipes that I use all the time. So far I only have a few, not included the chicken curry, or the italian chicken, but one day I may get around it.... I made this up for forest, but thought I'd share!

Frying Pan Pizza

8 oz (225g) self raising flour (all purpose flour for usa I think...)
1/2 teaspoon salt
black pepper
1 tablespoon Italian herbs/mixed herbs/ or fresh chopped herbs if you like
4 tablespoons olive oil
water

sift the flour into a large bowl with the seasoning and the herbs. make a well in the center and pour in 2 tablespoons of the olive oil followed by 4 tablespoons of water. Now mix to a soft, not sticky, dough - you may find you need to add a further tablespoon or so of water to get the right consistency.

Flour a surface and turn the dough out to knead lightly before rolling it out to a round that will fit your frying pan. Heat 1 tablespoon of the remaining olive oil in the pan, place the circle of dough in it and cook over a low heat for about 5 mins or until the base is lightly browned. Now with an oiled plate turn the pizza base out on to it, then after heating another tablespoon of oil slide the pizza back in and cook the other side for 5 minutes. Alternatively if your pan handle is not plastic, you could cook the other side under the grill, saves turning it!

after that is cooked, add your tomato sauce and any topping you like and then stick it under the grill to melt the cheese!

Tomato sauce

You can use this for pretty much any Italian dish. I use it for the pizza and the meatballs, it is very versatile!

400g tin of chopped tomatoes
1 onion
handful of mixed/Italian herbs
clove of garlic
sat and pepper to season
tablespoon of oil

heat the oil in the pan, and add the onion. When the onion is just about to turn soft add the garlic and cook for a minute. Then open the tin of tomatoes and add it to the pan and just cook that until it reduces down. If you like you can add half a tin of water - it gets all the tomato out and it can intensify the flavour. Towards the end of cooking throw in the herbs and season to taste. That’s it, that’s all you have to do to make a tasty tomato sauce for your pizza base! If you like lemon feel free to add some into the sauce!

Meatballs

It only makes sense if I follow the sauce with the meat balls so here you go!

500g/1lb pork mince (bc I don’t think you can get saucermeat over there, I think it’s a shetland thing... XD)
1 tablespoon of olive oil
handful of mixed herbs/Italian seasoning
1 small onion, chopped
2 cloves of garlic, crushed
Lemon juice (optional)
salt and pepper to season

Alright this is really fun! Just throw everything into a bowl and mix. To stop the meat and stuff sticking to your hands just wet your hands with a little waters so they are damp, and get them into the bowl and mix everything together. When that is done just break of a lump that will fit into the palm of your hand and roll into a ball and set on a foil lined baking tray.

You cook this in the oven for 25 - 30 mins on gas mark 7/425F/230C

Serve with pasta of your choice and the tomato sauce!

Spaghetti Bolognese

500g/1 lb mince
oil
1 onion
2 cloves of garlic, crushed
400g tin of tomatoes
1 beef stock cube
1 tablespoon of mixed herbs/italian seasoning
salt and pepper to season
some sweetcorn or pepper or veg of choice - carrots work as well (optional)

heat some oil in a pan, chop the onion and add it to the pan on a medium heat. When the onion is soft and translucent, add the garlic and cook for 1-2 minutes. Turn up the heat and add the mince, and break it up and brown it. Add the stock cube.

When the mince is no longer pink outside, open the tin of tomatoes and pour into the pan, add some water half way up the tin and pour into the pan. Throw in your veggies of choice and leave to cook for 20mines or so, stirring occasionally. At the last 10 mins add the herbs and season to taste.

Serve with spaghetti and enjoy!

Chilli con Carne

super easy to make from scratch and more tasty imo! It takes a little time, but I promise you it is well worth it!

500g/1 lb minced beef
1 onion
2 garlic cloves, peeled
1 bell pepper (red, yellow or orange, whichever you prefer)
400g tin of tomatoes
1 heaped teaspoon of hot chilli powder (or 1 tablespoon of mild if you don’t have hot)
1 teaspoon ground cumin
1 teaspoon paprika
1 beef stock cube
1\2 teaspoon of dried marjoram
1 teaspoon of sugar (or small piece of dark chocolate - about the size of your thumbnail)
2 tablespoons of tomato puree
410g tin of kidney beans

Prep your veg. dice the onion finely; cut your pepper in half then remove the stalk and wash away the seeds and chop into rough squares. Pop the kettle on!

put the pan on the hob on a medium heat and the oil and leave for 1-2 mins to heat up - longer for an electric hob. cook the oins, stiring fairly frequently for about 5 mins or until the onions are soft and slightly translucent. Tip in the garlic, pepper, chilli, paprika and cumin. Give it a good stir and leave to cook for another 5 mins, stirring now and then.

Brown the mince. Turn up the heat a bit, add the mince to the pan and break it up with your spoon or spatula. Keep stirring until the mince is all evenly browned and broken up, no more pink bits showing.

Crumble the stock cube into a 300ml/1 pint of hot water. pour this into the pan mixture. Open the tin of tomatoes and chuck that in as well. add the marjoram and sugar (or chocolate!), ad a good shake of salt and pepper and squirt in the tomato puree and stir it all together.

Simmer gently. Bring to the boil, give a good stir and put a lid on it. Turn the heat down until it is gently bubbling and leave for 20 mins. Give it a stir now and then to stop it sticking to the bottom of the pan. If it is drying out, don’t worry, just add some water! pop the kettle on again if you are having rice!

After that, add the kidney beans, drain and rinse them in a sieve and stir them into the chilli. Bring to the boil again and gently bubble without the lid for another 10 minutes, adding more water if it looks dry again. Taste the chilli and season if needed! pop the lid back on, turn off the heat and leave to rest for 10 minutes. This is important as it allows the flavour to mingle with the meat.

While it is resting you can cook the rice. We have a foolproof way of doing it in 15 minutes without the hassle of draining it!

just remember it is 2 parts water to 1 part rice! for 3 people we usually do 600 ml water to 300ml rice, measuring in a measuring jug. Bring the water to the boil and season with salt, then put the rice in and the lid on and bring to the boil again. Turn the heat right down and leave to simmer for 10 minutes. After the 10 minutes are up, just turn the heat off and put a bit of kitchen roll on the top of the rice and replace the lid and leave to steam for 5 minutes. Then it is ready to serve!

Alternatively you can serve this chilli with nachos, just throw some into a bowl/plate and grate some cheese over them and melt the cheese under the grill until brown then scoop some chill over them and enjoy!

There will be leftovers, but that’s perfect for the frying pan pizza base!
